Holiday Cookies

This holiday season I’ve gotten it in my head that I’m going to bake and give cookies. Widely respected bakers Aunt Alvina and Mom Homan have been gracious enough to share some favorite recipes. And I’ve gathered a few of my own.

Here’s the first installment, a recipe I found this past weekend at the Harbor Country Cookie Walk in New Buffalo, Michigan. This is a tasty treat, requires no baking, and the whole operation takes under an hour.

Boiled Cookies

1/2 cup butter
1 cup brown sugar
4 level tbsp. unsweetened cocoa (I like using Ghiradelli)
3 cups oatmeal
3/4 cups peanut butter
1/2 cup milk
1 cup white sugar
1 tsp. vanilla extract
1 pinch of salt

Melt butter in large saucepan. Add milk, brown sugar, white sugar and cocoa. Boil all ingredients for about two minutes or until mixture starts to thicken. Lay out waxed paper on counter. Remove cocoa mixture from heat and add salt, vanilla, peanut butter. Stir until peanut butter is completely mixed in. Add oatmeal. Stir well. Drop on waxed paper by about level teaspoonfuls and let stand until hard.
